Ingredients

  • Chicken drumettes, as needed (about 500 g)
  • 1 section scallion
  • 1 piece ginger
  • 3 cloves garlic
  • 1 star anise
  • 20 Sichuan peppercorns
  • 3 bay leaves
  • 1 tablespoon cooking oil
  • 1 tablespoon Shaoxing wine
  • Sweet and sour sauce:
  • 1/2 tablespoon dark soy sauce
  • 1 tablespoon light soy sauce
  • 2 tablespoons white sugar
  • 3 tablespoons white vinegar
  • 4 tablespoons tomato sauce
  • 5 tablespoons water
  • Other:
  • 1 tablespoon toasted white sesame seeds
  • 1 scallion leaf

    Cut the scallion into sections and slice the ginger; these will be used for blanching.

    Prepare the star anise, Sichuan peppercorns, bay leaves, sliced ginger, and sliced garlic.

    Add all the sauce ingredients to a bowl and mix well; set aside.

    Wash the chicken drumettes.

    Score the drumettes with shallow cuts.

    Place the drumettes in a pot of cold water, then add the scallion sections, ginger slices, and Shaoxing wine.
