Braised Cod with Tofu
Cod braised with tofu.

Ingredients
- 1 cod
- 1/2 block tofu
- 2 scallions
- 3 slices ginger
- 4 dried chilies
- 1 tablespoon light soy sauce
- 3 g sugar
- 5 g salt
- 4 g white pepper powder
- 2 g matsutake mushroom powder
- 1 tablespoon Shaoxing wine
Steps

Clean the cod and cut it into sections. Cut the tofu into chunks.

Bring water to a boil and add 1 tablespoon Shaoxing wine. Once boiling, add the cod, blanch for 30 seconds, then remove and set aside.

Heat oil in a wok or pot, then add the scallion, ginger slices, and dried chilies and stir-fry until fragrant.

Add half a pot of boiling water and bring it to a boil.

Add the cod and tofu, then add 1 tablespoon light soy sauce, 3 g sugar, and 5 g salt. Simmer over medium-low heat for 20 minutes.

Just before serving, add 4 g white pepper powder and 2 g matsutake mushroom powder.
