Ingredients

  • 1 cod
  • 1/2 block tofu
  • 2 scallions
  • 3 slices ginger
  • 4 dried chilies
  • 1 tablespoon light soy sauce
  • 3 g sugar
  • 5 g salt
  • 4 g white pepper powder
  • 2 g matsutake mushroom powder
  • 1 tablespoon Shaoxing wine

    Clean the cod and cut it into sections. Cut the tofu into chunks.

    Bring water to a boil and add 1 tablespoon Shaoxing wine. Once boiling, add the cod, blanch for 30 seconds, then remove and set aside.

    Heat oil in a wok or pot, then add the scallion, ginger slices, and dried chilies and stir-fry until fragrant.

    Add half a pot of boiling water and bring it to a boil.
