Cantonese-style ginger-scallion stir-fried chicken.

- cornstarch
- cooking oil
- sliced ginger
- scallion sections
- garlic cloves
- Guangdong rice wine
- oyster sauce
- light soy sauce

Pat the cleaned chicken dry.

Add salt, cornstarch, and cooking oil, then mix well and marinate for a while to give it a base flavor.

Prepare some sliced ginger, scallion sections, and garlic cloves.

Heat oil in a wok or pan, add the chicken, and pan-fry over medium-high heat. This helps lock in moisture and render out some of the fat.
