Scallops with Vermicelli
This quick and satisfying scallop vermicelli dish uses a garlicky crayfish seasoning mix for bold flavor. Tender scallops are stir-fried and served over soft vermicelli that has soaked up the savory sauce.

Ingredients
- 1 handful Longkou vermicelli
- 15 large frozen scallops
- 2 large spoonfuls garlic crayfish seasoning
- Scallions and garlic, to taste
- Fresh ginger and Shaoxing wine, to taste
- Pepper powder and chili powder, to taste

Garlic crayfish seasoning can make even a beginner cook feel like a pro in no time.

Its ingredients include garlic (≥40%), vegetable oil, water, salt, sugar, MSG, oyster sauce (with caramel color), chicken seasoning, onion, garlic powder, ketchup, and more.

Open one packet and transfer it into a clean jar.

Cook the soaked vermicelli in a pot until done, then transfer it to a bowl and set aside.

Use the same pot that cooked the vermicelli to blanch the thawed scallops.

Heat oil in a wok and stir-fry the scallions and garlic until fragrant.

Add 2 large spoonfuls of the garlic crayfish seasoning and stir-fry. Add fresh ginger, Shaoxing wine, pepper powder, and chili powder to taste.

Add a little boiling water and simmer until flavorful. Before removing from the heat, add MSG and chopped scallions.
