Century Egg Tofu
A quick and refreshing cold tofu dish made with silky tofu and century eggs, finished with a savory garlic sauce and fragrant scallion oil. Simple to prepare and perfect as an appetizer or side dish.

Ingredients
- 1 box silken tofu
- 2-3 century eggs
- Some chopped scallions
- 2 cloves garlic
- Sauce seasonings (see image below)
- 5 Sichuan peppercorns

Place the silken tofu on a plate. If you're just making it at home, there's no need to slice and arrange it neatly—just serve it up hearty and generous. Cut the century eggs into chunks and add them on top.

Make the sauce: combine 1 1/2 tablespoons light soy sauce, 1/2 tablespoon oyster sauce, 1/2 tablespoon Chinkiang vinegar, 1 teaspoon sesame oil, 4 g sugar, 2 g matsutake powder, 3 g salt, and the minced garlic. Mix well and pour it onto the plate. Then heat a little oil, add the chopped scallions and Sichuan peppercorns, and cook until fragrant. Remove the peppercorns, then add the scallions to the plate and mix well. You can also drizzle in a little of the hot oil.
