Stir-Fried Beef with Sand Chives
This quick stir-fry combines tender marinated beef with sand chives for a savory, lightly sweet dish that goes especially well with rice.

Ingredients
- 250 g beef
- 50 g sand chives
- 1 small millet chili
- 5 ml light soy sauce
- 5 g oyster sauce
- 3 g sugar
- 5 ml rice wine
- 3 g ground pepper
- 8 g oil

Wash the sand chives, drain well, and cut them into long sections about finger length. Slice or shred the beef, but do not cut it too thick. Add the seasonings listed above and mix well to coat, then marinate for 10 minutes.

Heat a wok and add the oil; you can use a little extra oil if you like. Add the beef and stir-fry over medium-high to high heat.

As soon as the surface of the beef has completely changed color, the chives can go in. The stir-frying only takes about 2 minutes in total, and shredded beef cooks even faster than sliced beef, so do not overcook it.

Add the sand chive segments and stir-fry for about 30 seconds. Once they begin to soften, add the remaining marinade and the millet chili, then stir-fry for another 30 seconds to finish.

The whole stir-frying process takes only about 3 to 4 minutes. Because the beef is marinated, it is well seasoned and cooked just right.

Tips
- Do not slice the beef too thick, or it will be harder to keep tender.
- Shredded beef cooks faster than sliced beef, so adjust the stir-frying time accordingly.
- The dish cooks very quickly, so have all ingredients prepared before turning on the heat.
- If you want a stronger aroma and sweetness from the vegetable, you can add a little more sand chives.
- After being stir-fried, the sand chives lose most of their pungency and taste fresher and sweeter, so the millet chili is there mainly to lift the flavor.
- Any leftover pan sauce is great spooned over rice.
